Average Cover
Also called: average spend per head, APC
What is Average Cover?
Average cover, or average spend per head, is total sales divided by the number of guests served. It is the restaurant version of average order value and the cleanest measure of how well a menu and a floor team sell.
Why Average Cover matters
Raising average cover is usually cheaper than raising footfall. A ₹40 lift per head across 4,000 monthly covers is ₹1,60,000 with no extra marketing spend at all.
Average Cover formula
Average cover = Total sales ÷ Covers
Compute it per day-part and per channel rather than as one blended figure.
How Average Cover works in practice
Move it with menu structure and service habits: suggested pairings, sides, desserts and beverages. Track it by day-part, because a weekday lunch average tells you nothing about a Saturday dinner.
